I know it’s still early May, but these warm, sunny days have me dreaming about all-things-summer. Although it’s not official yet, I am hoping to be in my new home (though probably not settled) by the time summer rolls around. (In case you missed it, I spilled the beans about my new home here.)




My first priority is getting a couple of the outdoor spaces functional so I can embrace the glorious summer weather as much as possible. That means plenty of weekend cook-outs, evenings around the firepit, and afternoon snacks on the porch. Sounds fabulous, right?


This layered BLT Dip is sure to be a hit at your next gathering. Layered with bacon, lettuce, tomato, and cheese, this appetizer recipe brings together the classic flavors everyone loves.

INGREDIENTS
  • 1 package (8 ounces) cream cheese softened
  • 1/2 cup mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 1 cup finely chopped romaine lettuce
  • 8 bacon strips cooked and chopped
  • 4 plum tomatoes chopped
  • 4 green onions chopped
  • 1 1/2 cups shredded cheddar cheese
  • Tortilla scoops or a baguette sliced and toasted
INSTRUCTIONS
  1. In a small bowl, beat together the cream cheese, mayonnaise, and Parmesan until smooth.
  2. Spread in the bottom of a shallow dish (large pie plate or 8x11-inch baking pan); then layer with the lettuce, bacon, tomatoes, onions and cheddar cheese. Refrigerate until serving. Serve with tortilla scoops or toasted baguette slices.
